PRUDENCE HILBURN: Cakes part of holiday baking tradition
When I was growing up, it was routine to have a large dessert table at Christmas because my mother usually made at least a dozen mouth-watering cakes plus other desserts. In my memory bank of great desserts, I still can see her Lady Baltimore Cube, Lord Baltimore Cake, Fresh Coconut Cake, Old Fashioned Chocolate Loaf, Date and Pecan Cake, Hickory Nut Cake, Fruit Pastry and Lane Cake.
The Lane Cake has an interesting history. This Southern prototype was created in the 1800s by another Alabamian, Emma Rylander Lane of Clayton. She entered her cake, which had a full bourbon or brandy fruit-and-nut filling, in a county fair baking striving and won first prize. When she published her recipe in her cookbook, “Some Good Things To Eat,” she called it the “Receipts” Cake. At the suggestion of a friend, she later changed the name to Lane Cube.
If you have read the novel, “To Kill a Mockingbird,” you may retract that the character Maudie Atkinson baked a Lane Cake. Another rectitude, Scout, remarked, “Miss Maudie baked a Lane Loaf so loaded with shinny, it made me tight.” Shinny was slang for the wino beverage she put in the cake.
