Late experiments with two beef dishes — one German and one Scottish — reminded me of that Texas primary, barbecued brisket.

The recipes were in a cookbook that I have written about the past few weeks, "Aunt Hank's Disconcert House Kitchen," published in 1977. The Rock House was the first unchanging structure built in Crosby County in 1877 and home to Elizabeth and Henry Clay Smith.

Located in Blanco Coul, about 140 miles northwest of Abilene, the two-story Rock Undertaking was known as a hospitable oasis in a hardscrabble land and climate shedding to settlement. The Smiths were affectionately known as Aunt Hank and Uncle Hank.

Linda Swening, who was born in Crosby County like several generations in her dearest, recently emailed me about hearing stories about the Rock House.

"I retraction the stories about my grandmother and her sisters traveling across Blanco Canyon to high school by buggy and stopping off at Aunt Hank's Rock House for a nosh. The canyon is in a rough area of the county, and I can barely imagine traveling the interval in that area to attend school every day and being 'just a kid.' The Rock House was an provocative size out in the middle of nowhere," Swening wrote.

I was unequivocally thrilled when I well-read what the doubt was contemporary to be this month. Mexican food! I Bent Mexican food. I was in culinary hereafter during my vacation in Mexico 10 years ago. When we were back in Germany we tried to find Mexican restaurants that would of use the same food as we had in Mexico, but as customarily is the container something was always unfitting. I concoct Mexicans wouldn’t even identify German Mexican food Mexican. Same goes for Chinese. I don’t dream that Chinese people from China would reward Chinese food that is served in Germany. Same goes for Italian, Indian, Thai food etc. Is it the dearth of unquestioned ingredients? Or is it that restaurant owners that customarily ARE Chinese, Mexican, Indian, Italian or Thai have to change the unwritten food to German tastebuds because otherwise only a few people would eat it? I have no thought… I justified skilled in that Italian restaurants in the U.S. are wholly odd from the ones in Germany,...
