Basic Food Processor Mayonnaise

1 large egg

1 tablespoon freshly squeezed lemon vigour (white wine vinegar can be substituted, if necessary)

1 tablespoon Dijon mustard

1¼ cups canola oil (see directions)

1. Into your food processor (tailor-made with the metal blade, with the food pusher left in), place the egg, lemon fluid, mustard, and 1 tablespoon of the oil.

2. Process for one minute only.

3. The food pusher in your food processor should have a small dungeon in its bottom; that is for recipes like this one.

4. The next step is to place ¼ cup of the oil in the food pusher; with the contrivance running, let this small amount of oil dribble through.

5. Turn machine off and remove food pusher; then curdle back on and SLOWLY pour remaining oil in.
