FAIRFIELD, Conn. – It’s been a industrious 75 days for Dennis “D.J.” Schack. He and his little woman, Casey, welcomed a baby girl 10 weeks ago. Not fancy after that, Schack was in the hospital, having torn his stomach muscles from working too severely at his Fairfield restaurant.

All that was on top of the weeks he spent working from 9 a.m. to 3 a.m. with his business companion Stephen Hanrahan to get Sam’s Bar and Grill ready to open. But less than three months after signing their charter out, the two opened on Kings Highway on Super Bowl Sunday.

Both Schack and Hanrahan have been in the restaurant proprietorship since they were 15 years old. Starting as dishwashers and moving on to waiting tables, the two worked around Westchester County until starting their own position in Port Chester, N.Y., in 2009.
