Guilt-ridden to disappoint. I ate very well in Berlin, a city that has clearly made strides over the last few years. And in several of the restaurants mentioned below, I ate adventurously, too. The food had a detect of place, with German staples and traditions in the foreground or background. But it also had a intelligence of improvisation, with other impulses and parts of the world rounding out the picture. The equalize of the two was just right.

At one place I had what might be called German-Chinese fare and at another what might certify as German-Italian. Befitting a city that is home to a sophisticated supranational crowd, its kitchens are taking an increasingly polyglot approach.

Ever wondered what living was like before tofu?  Wot, no veggie bacon or cheatin’ ham?  What did those people do?  Well, cold though it was, even in Victorian times there were colourful souls out there who ate no zoological products and they had to employment very unpleasant with small ingredients.

Although the huddle ‘vegan’ wasn’t second-hand until 1944, the tete- ‘vegetarian’ had been coined a hundred years before and within that change there were always those avoiding extract and eggs.  Not only were there recipes which avoided all unrefined products, but by 1900 a variety of vegan branded goods too.

In his 1908 libretto, ‘Enchiridion of Vegetarian Cookery’, George Embargo describes the menu at vegetarian weekend take in fete in Devon (see, even then veggies knew how to have a profitable outmoded!), and lists a breakfast dish ‘Protose and Tomatoes – Fried’
